3 medium beets (fresh)
2 tbsp olive oil
Salt & black pepper (to taste)
1 clove garlic (minced)
1 tbsp lemon juice or apple cider vinegar
½ cup crumbled feta cheese
¼ cup chopped walnuts (optional but amazing)
1 tbsp chopped parsley or dill
👩‍🍳 Instructions
Cook the beets
Wash beets and trim ends.
Boil in salted water for 30–40 minutes until fork-tender
or roast wrapped in foil at 200°C (400°F) for 45–60 minutes.
Peel & cut
Let cool slightly, then rub skins off with a paper towel.
Cut into cubes or slices.
Season
Toss warm beets with olive oil, garlic, lemon juice, salt, and pepper.
Finish the salad
Sprinkle with feta, walnuts, and fresh herbs.
Serve
