🛒 Ingredients
1 lb (450g) fresh green beans, trimmed
1½ lbs (700g) baby potatoes (or chopped Yukon Gold/red potatoes)
3 tablespoons butter (or olive oil)
3 cloves garlic, minced
½ small onion, finely chopped (optional but delicious)
1 cup chicken broth (or vegetable broth)
Salt & black pepper to taste
½ teaspoon dried thyme (optional)
½ teaspoon paprika (optional)
Fresh parsley for garnish
👩‍🍳 Instructions
Prep the veggies
Wash and trim green beans. Cut larger potatoes into bite-size chunks.
Sauté aromatics
In a large skillet or Dutch oven, melt butter over medium heat.
Add onion and cook 2–3 minutes until soft.
Stir in garlic and cook 30 seconds until fragrant.
Add potatoes
Add potatoes, salt, pepper, thyme, and paprika. Stir to coat.
Simmer
Pour in broth. Cover and simmer for 10–12 minutes.
Add green beans
Stir in green beans, cover again, and cook another 10–15 minutes until potatoes are fork-tender and beans are crisp-tender.
Finish
Adjust seasoning. Garnish with fresh parsley.
