🧡 Buffalo Roasted Cauliflower Bites (with Creamy Ranch Dip)
Ingredients
For the cauliflower
1 large head cauliflower (cut into florets)
2–3 tbsp olive oil
½ tsp garlic powder
½ tsp smoked paprika (or regular paprika)
½ tsp onion powder
Salt & black pepper
½ cup buffalo sauce (or hot sauce mixed with a little butter)
Optional extra crisp
2 tbsp cornstarch (or flour)
For the ranch dip
½ cup mayonnaise
½ cup sour cream or Greek yogurt
1 tsp lemon juice or vinegar
½ tsp garlic powder
½ tsp onion powder
1–2 tbsp chopped dill or parsley
Salt & pepper
Splash of milk (to thin, if needed)
Instructions
1️⃣ Roast the cauliflower
Preheat oven to 220°C / 425°F
Toss cauliflower with olive oil, garlic powder, paprika, onion powder, salt & pepper
For extra crisp: sprinkle with cornstarch and toss again
Spread on a baking tray (don’t overcrowd!)
Roast 25–30 minutes, flipping halfway, until crispy and golden
2️⃣ Sauce it up
Warm buffalo sauce slightly
Toss roasted cauliflower in the sauce
Return to oven 5–8 minutes to caramelize
3️⃣ Make the ranch dip
Mix all dip ingredients in a bowl
Adjust thickness with milk
Chill 10 minutes if you have time (tastes better!)
🔥 Air Fryer Option
Cook at 200°C / 390°F for 12–15 minutes, shaking halfway
Toss in buffalo sauce and air fry 2–3 more minutes

Add grated parmesan after roasting
Sprinkle with fresh parsley
Squeeze of lemon at the end
