🥔 Buttery Roasted Potato Chunks
Ingredients
Potatoes (any kind), cut into chunks
Butter (2–3 tbsp, melted)
Olive oil (optional but helps crisp)
Salt & black pepper
Garlic (optional, minced or powder)
Herbs (optional: rosemary, thyme, paprika, chili flakes)
Instructions
Preheat oven to 220°C / 425°F.
Toss potatoes with melted butter, a little olive oil, salt, pepper, and any herbs/spices you like.
Spread on a tray (don’t crowd them — space = crispiness).
Roast 25–35 minutes, flipping halfway, until golden and crispy on the edges.
Finish with a tiny extra knob of butter or a squeeze of lemon if you’re feeling fancy ✨
Quick pan version (stovetop)
Heat butter + a little oil in a pan.
Add potato chunks, salt, pepper.
Cover and cook on medium until soft inside (10–12 min).
