Ingredients
6 bone-in, skin-on chicken thighs (or boneless if you prefer)
Salt & black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp dried thyme (or Italian seasoning)
2 tbsp olive oil or butter
1 large onion, sliced
3 cloves garlic, minced
1 cup chicken broth
1 tbsp flour (optional, for thicker gravy)
1 tbsp soy sauce (optional, adds depth)
Fresh parsley (for garnish)
Instructions
Heat oven to 400°F (200°C).
Season chicken
Pat thighs dry. Season both sides with salt, pepper, garlic powder, paprika, and thyme.
Sear for flavor (optional but awesome)
Heat oil in a pan over medium-high. Brown chicken thighs skin-side down for 3–4 minutes per side. Transfer to a baking dish.
Make the onion gravy base
In the same pan, sauté onions until soft and lightly golden (5–7 minutes).
