🥔 Cheesy Bacon Stuffed Potatoes
Ingredients
6 medium potatoes (russet or any baking potatoes)
1 cup shredded cheese (cheddar or mozzarella, or both)
½ cup cooked bacon, chopped (or turkey bacon)
3 tbsp butter
¼ cup milk (or cream for extra creamy)
2 tbsp sour cream or plain yogurt (optional but good)
1–2 cloves garlic, minced (optional)
Salt & pepper to taste
Chopped parsley or green onions (optional topping)
How to Make It
1️⃣ Bake the potatoes
Preheat oven to 200°C / 400°F
Wash potatoes, poke a few holes with a fork
Bake for 45–60 minutes until soft inside
2️⃣ Scoop & mash
Let potatoes cool a bit
Cut each potato in half
Scoop the inside into a bowl (leave a thin layer so skins don’t tear)
Mash with:
Butter
Milk
Sour cream
Salt & pepper
Garlic (if using)
3️⃣ Add the good stuff
Mix in:
Most of the cheese
Most of the bacon
Save a little for topping
4️⃣ Stuff & top
Spoon mixture back into potato skins
Sprinkle remaining cheese + bacon on top
5️⃣ Bake again
Put back in oven for 15–20 minutes
Until golden and bubbly on top
6️⃣ Finish
Sprinkle parsley or green onions
Serve hot 😋
