Ingredients (2–3 servings)
2 chicken breasts
1 can white beans (cannellini or great northern), drained & rinsed
2 cloves garlic, minced
2 tbsp olive oil
½ tsp paprika
½ tsp dried oregano or thyme
Salt & pepper
Optional but awesome:
Cherry tomatoes (a handful)
Lemon slices or lemon juice
Fresh herbs (parsley or basil)
Parmesan (for finishing)
How to Make It

  1. Season the chicken
    Pat chicken dry. Season both sides with salt, pepper, paprika, and oregano.
  2. Sear (for flavor!)
    Heat olive oil in a pan over medium-high.
    Sear chicken 3–4 minutes per side until golden (it doesn’t need to be cooked through yet). Remove and set aside.
  3. Beans = flavor sponge
    Lower heat to medium. Add garlic, stir 30 seconds.
    Add white beans (+ tomatoes if using). Stir, scraping up the tasty bits.
  4. Combine & finish
    Nestle chicken back into the pan on top of the beans.
    Cover and cook 6–10 minutes until chicken is cooked through.
  5. Brighten it up
    Squeeze lemon over everything. Sprinkle herbs + Parmesan if you’re feeling fancy.
    Oven Version (if you don’t want to babysit a pan)
    Put seasoned chicken in a baking dish
    Pour drained beans + garlic + olive oil around it
    Bake at 400°F / 200°C for 22–25 minutes
