🍯 One-Pan Honey Garlic Chicken & Veggies

Ingredients (serves ~4)
1½ lb chicken thighs or breasts (boneless = faster)
2 cups broccoli florets
2 carrots, sliced
2 cups baby potatoes (halved)
3 tbsp olive oil
¼ cup honey
3 tbsp soy sauce (or tamari)
3 cloves garlic, minced
Salt + pepper
Optional: chili flakes, lemon wedges
How to make it
Heat oven to 425°F / 220°C
Mix sauce: honey + soy sauce + garlic + olive oil
Toss everything on a sheet pan with salt & pepper
Spread it out (crowding = soggy veggies)
Bake 20–25 min, flip once halfway
Finish: squeeze lemon or sprinkle chili flakes if you want a little pop
