Greek Meatball Bowl with Tzatziki, Rice & Fresh Veggies

Ingredients:
For the Greek Meatballs:
1 lb ground turkey or chicken
2 cloves garlic (minced)
1/4 cup red onion (finely chopped)
2 tbsp fresh parsley (chopped)
1 tbsp fresh dill (chopped)
1 egg (beaten)
1/4 cup breadcrumbs
1 tsp dried oregano
Salt & pepper to taste
2 tbsp olive oil (for cooking)


For the Tzatziki Sauce:
1/2 cup cucumber (grated and squeezed to remove water)
1 cup Greek yogurt
1 clove garlic (minced)
1 tbsp fresh dill (chopped)
1 tbsp lemon juice
Salt to taste
For the Bowl:
2 cups cooked basmati or jasmine rice
1 cup cherry tomatoes (halved)
1 cup cucumber slices
1 cup bell peppers (sliced)
1/4 cup red onion (sliced thinly)

Instructions:
Prepare the Meatballs:
In a large bowl, mix ground meat, garlic, red onion, parsley, dill, egg, breadcrumbs, oregano, salt, and pepper. Roll into 1-inch balls.
Heat olive oil in a skillet over medium heat. Cook the meatballs for 8-10 minutes, turning occasionally, until browned and fully cooked.
Make the Tzatziki Sauce:
Combine grated cucumber, Greek yogurt, garlic, dill, lemon juice, and salt in a bowl. Mix well and refrigerate until ready to serve.
Cook the Rice:
Cook rice according to package instructions. Fluff with a fork and keep warm.
Assemble the Bowl:
In each bowl, layer cooked rice, fresh cherry tomatoes, cucumber slices, bell peppers, and red onion. Add a generous serving of tzatziki and top with warm meatballs.


Serve:
Garnish with fresh dill or parsley, and enjoy your vibrant, healthy Greek-inspired bowl!
Chef’s Notes:
Add Kalamata olives or crumbled feta for extra Mediterranean flair.
Substitute rice with quinoa or cauliflower rice for a low-carb version.
