Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup unsalted butter, melted
2/3 cup milk
1 tsp vanilla extract
1 large egg
2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced
Vegetable oil, for frying
For the glaze:
1 cup powdered sugar
2–3 tbsp milk
1/2 tsp vanilla extract
Instructions:
Mix dry ingredients
In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
Combine wet ingredients
In another bowl, mix melted butter, milk, vanilla, and egg until smooth.
Combine wet and dry
Gradually stir the wet mixture into the dry ingredients until just combined. Fold in the diced apples. The batter should be thick but scoopable.
Heat oil
Pour vegetable oil into a deep skillet or pot to a depth of about 2 inches. Heat to 350°F (175°C).
Fry fritters
Using a spoon, carefully drop small mounds of batter into the hot oil. Fry in batches for 3–4 minutes per side, until golden brown. Use a slotted spoon to remove and drain on paper towels.
