Mediterranean Ground Beef Stir Fry

Ingredients:
1 pound ground beef
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, sliced
1/2 cup cherry tomatoes, halved
1 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup kalamata olives, chopped (optional)
1/4 cup feta cheese, crumbled (optional)
Fresh parsley for garnish (optional)
Directions:
Heat olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
Add the chopped onion and minced garlic to the skillet. Cook for 2-3 minutes, or until the onion is softened and fragrant.
Stir in the sliced bell pepper, zucchini, and cherry tomatoes. Cook for another 5-7 minutes, until the vegetables are tender.
Sprinkle in the oregano, cumin, paprika, salt, and pepper. Stir to coat the beef and vegetables evenly with the spices.
If using, add the chopped kalamata olives and crumbled feta cheese, and stir gently to combine.
Garnish with fresh parsley before serving, and enjoy this flavorful Mediterranean stir fry!
