🎄 Golden Gingerbread Cheesecake Wreath
A festive centerpiece dessert featuring a gingerbread cookie crust, creamy spiced cheesecake filling, and a decorative wreath of sugared cranberries, fresh rosemary, and a golden caramel drizzle.
Ingredients:
For the Crust:
2 cups (200g) gingerbread cookies, finely crushed
1/4 cup (60g) unsalted butter, melted
For the Spiced Cheesecake Filling:
16 oz (450g) cream cheese, softened
1/2 cup (100g) granulated sugar
1/2 cup (120ml) sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
2 large eggs
For the Decorations:
1 cup (120g) fresh cranberries
1/4 cup (50g) granulated sugar
2 sprigs fresh rosemary
1/4 cup (60ml) salted caramel sauce
Instructions:
Prepare the Crust:
Preheat the oven to 325°F (165°C) and grease a round springform pan.
Mix the crushed gingerbread cookies with melted butter until combined. Press the mixture into the bottom of the pan and slightly up the sides to form a crust. Bake for 10 minutes and let cool.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar until smooth. Add sour cream, vanilla, and spices, and mix until combined.
Add eggs one at a time, beating on low speed until just blended. Pour the mixture over the cooled crust.
Bake the Cheesecake:
Place the pan in a water bath (wrap the pan in foil to prevent leaks) and bake for 50–60 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar. Refrigerate for at least 4 hours or overnight.
Decorate the Wreath:
Roll cranberries in granulated sugar until coated. Arrange them around the edge of the cheesecake with sprigs of rosemary to create a wreath.
Drizzle salted caramel sauce over the top for a golden, festive finish.
Serve:
Slice and serve chilled, letting the festive wreath wow your guests.
