Ingredients:

For the Spring Rolls:
1 lb ground beef
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1 tablespoon minced garlic
1 tablespoon grated ginger
1 cup shredded lettuce
1 cup shredded carrots
1 cucumber, julienned
1/2 cup fresh cilantro, chopped
1 package rice paper wrappers

For the Peanut Lime Sauce:
1/2 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon lime juice
1 tablespoon honey
1 teaspoon sesame oil
1-2 teaspoons sriracha (optional for heat)
Water, to thin the sauce

Instructions:

Prepare the Beef Filling:
In a large skillet, heat sesame oil over medium heat. Add the ground beef, garlic, and ginger. Cook, breaking up the beef into small pieces, until browned and cooked through, about 5-7 minutes. Stir in the soy sauce and hoisin sauce, then remove from heat and set aside.

Prepare the Vegetables:
While the beef is cooking, shred the lettuce, carrots, and slice the cucumber into thin julienne strips. Chop the cilantro and set all the vegetables aside.

Assemble the Spring Rolls:
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft. Lay the wrapper flat on a clean surface. In the center of the wrapper, layer a small portion of the cooked beef, lettuce, carrots, cucumber, and cilantro.

Roll the Spring Rolls:
Fold in the sides of the rice paper, then roll tightly from the bottom up, securing the filling inside. Repeat with the remaining wrappers and filling.

Make the Peanut Lime Sauce:
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, and sriracha (if using). Gradually add water to thin the sauce to your desired consistency.
