Creamy Baked Chicken & Rice Casserole
🛒 Ingredients
2–3 boneless, skinless chicken breasts (or 5–6 thighs)
1 cup uncooked long-grain white rice
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 ½ cups chicken broth
1 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
Salt & black pepper to taste
1 ½ cups shredded cheddar or mozzarella
Optional: chopped parsley for garnish
👩🍳 Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix together rice, soups, chicken broth, sour cream, and seasonings.
Pour mixture into a greased 9×13 baking dish.
Place chicken on top. Season lightly with salt and pepper.
Cover tightly with foil and bake for 60 minutes.
Remove foil, sprinkle cheese on top, and bake another 10–15 minutes until cheese is melted and bubbly.
Let rest 5 minutes before serving. Garnish with parsley if desired.
