🛒 Ingredients (serves 3–4)
2 medium sweet potatoes, peeled
3–4 carrots, peeled
2 cloves garlic, minced
1 cup cream (or milk / coconut milk)
2 tbsp olive oil or butter
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional)
½ tsp thyme or rosemary
½ cup grated cheese (optional – cheddar, mozzarella, or parmesan)
Optional toppings: breadcrumbs, chopped herbs, nuts
👩‍🍳 Instructions
Preheat oven to 190°C / 375°F.
Slice thinly – Cut sweet potatoes and carrots into thin rounds (the thinner, the faster & more even they cook).
Season cream – In a bowl, mix cream, garlic, salt, pepper, paprika, and herbs.
Layer it up – Grease a baking dish. Layer sweet potatoes and carrots, slightly overlapping.
Pour & cover – Pour seasoned cream over the layers. Drizzle with olive oil or dot with butter.
Cover & bake – Cover with foil and bake 30–35 minutes.
Golden top – Remove foil, sprinkle cheese (and breadcrumbs if using), bake uncovered 10–15 minutes until golden and tender.
Rest & serve – Let it sit 5 minutes before slicing.
