2 medium sweet potatoes, peeled
3β4 carrots, peeled
2 cloves garlic, minced
1 cup cream (or milk / coconut milk)
2 tbsp olive oil or butter
Β½ tsp salt
Β½ tsp black pepper
Β½ tsp paprika (optional)
Β½ tsp thyme or rosemary
Β½ cup grated cheese (optional β cheddar, mozzarella, or parmesan)
Optional toppings: breadcrumbs, chopped herbs, nuts

Preheat oven to 190Β°C / 375Β°F.
Slice thinly β Cut sweet potatoes and carrots into thin rounds (the thinner, the faster & more even they cook).
Season cream β In a bowl, mix cream, garlic, salt, pepper, paprika, and herbs.
Layer it up β Grease a baking dish. Layer sweet potatoes and carrots, slightly overlapping.
Pour & cover β Pour seasoned cream over the layers. Drizzle with olive oil or dot with butter.
Cover & bake β Cover with foil and bake 30β35 minutes.
Golden top β Remove foil, sprinkle cheese (and breadcrumbs if using), bake uncovered 10β15 minutes until golden and tender.
Rest & serve β Let it sit 5 minutes before slicing.
