2 cloves garlic (minced)
1 liter beef broth (or vegetable broth)
1/2 cup dry white wine (optional)
1 tbsp flour (optional, for thicker soup)
Salt & black pepper (to taste)
1 baguette (sliced)
1–1½ cups grated Gruyère cheese (or mozzarella)
👨‍🍳 Instructions

  1. Caramelize the onions
In a large pot, melt butter with olive oil over medium heat.
Add sliced onions and cook slowly (25–35 minutes), stirring often.
Add sugar halfway through to help browning.
Cook until onions are deep golden and soft.
  2. Add garlic & flour
Stir in garlic and cook for 1 minute.
Sprinkle flour (optional) and mix well.
  3. Deglaze
Pour in white wine (if using), scraping up browned bits.
    Let it simmer 2–3 minutes.
  4. Add broth
    Pour in beef broth.
    Season with salt and pepper.
    Simmer for 15–20 minutes.
  5. Prepare bread
    Toast baguette slices until crisp.
  6. Assemble & broil
    Ladle soup into oven-safe bowls.
    Place toasted bread on top.
    Cover with cheese.
Broil for 2–5 minutes until bubbly and golden.
    🔥 Tips
Low and slow cooking is key for perfect caramelized onions.
Gruyère gives the most authentic flavor, but any melty cheese works.
Add a splash of balsamic vinegar for extra depth.
