Ingredients:
1 lb (450 g) chicken thighs or drumsticks (skin-on for extra flavor)
4 cups chicken broth
2 cups diced potatoes (any kind you like)
1 cup chopped carrots
Optional: Salt and pepper to taste (technically extra, but for seasoning you’ll want it!)
Instructions:
Prep the ingredients: Rinse chicken, peel and dice potatoes, peel and chop carrots.
Cook the chicken: In a large pot, add chicken and chicken broth. Bring to a simmer over medium heat.
Add vegetables: Add potatoes and carrots to the pot. Cover and let simmer for about 25–30 minutes, or until chicken is cooked through and vegetables are tender.
Finish & serve: Remove chicken bones if desired, season with salt and pepper, and ladle into bowls with the broth and veggies.
