🥗 Roasted Beet Salad (Healthy & Delicious)
🛒 Ingredients:
3–4 medium fresh beets
2 tablespoons olive oil
1 tablespoon vinegar (balsamic or apple cider)
1 teaspoon honey (optional)
Salt and black pepper (to taste)
1 clove garlic (minced)
A handful of fresh parsley or mint (chopped)
Optional: feta cheese or goat cheese
👨🍳 Instructions:
Prep the beets
Wash, peel, and cut the beets into cubes.
Roast
Toss with olive oil, salt, and pepper.
Roast in the oven at 200°C (400°F) for 30–40 minutes until tender.
Make dressing
In a small bowl, mix vinegar, honey, garlic, and a little olive oil.
Combine
Let the beets cool slightly, then toss with the dressing.
Finish
Sprinkle with fresh herbs and optional cheese.
