1 box yellow cake mix
1 can (565g) crushed pineapple (with juice)
1 cup shredded coconut
250g cream cheese (softened)
1 cup whipped cream (or whipped topping)
ยฝ cup sugar
1 tsp vanilla extract
ยฝ cup melted butter
Optional: extra coconut for topping

  1. Prepare the base
    Preheat oven to 180ยฐC (350ยฐF)
    In a bowl, mix:
    Cake mix
    Melted butter
    Press half of this mixture into a greased baking dish.
  2. Add pineapple layer
    Spread the crushed pineapple (with juice) evenly over the base.
  3. Make cream layer
    Beat together:
    Cream cheese
    Sugar
    Vanilla
    Fold in whipped cream
    Spread this creamy mixture over the pineapple layer.
  4. Add topping
    Sprinkle remaining cake mixture on top
    Add shredded coconut
  5. Bake
    Bake for 35โ€“40 minutes until golden on top.
