1 box yellow cake mix
1 can (565g) crushed pineapple (with juice)
1 cup shredded coconut
250g cream cheese (softened)
1 cup whipped cream (or whipped topping)
Β½ cup sugar
1 tsp vanilla extract
Β½ cup melted butter
Optional: extra coconut for topping

- Prepare the base
Preheat oven to 180Β°C (350Β°F)
In a bowl, mix:
Cake mix
Melted butter
Press half of this mixture into a greased baking dish. - Add pineapple layer
Spread the crushed pineapple (with juice) evenly over the base. - Make cream layer
Beat together:
Cream cheese
Sugar
Vanilla
Fold in whipped cream
Spread this creamy mixture over the pineapple layer. - Add topping
Sprinkle remaining cake mixture on top
Add shredded coconut - Bake
Bake for 35β40 minutes until golden on top.

Let it cool slightly
Serve with a dollop of whipped cream (just like in the picture π)
