There is nothing quite like a homemade donut. While the store-bought ones are fine, a fresh, warm donut dusted in sugar and bursting with silky cream is a truly magical experience.
The recipe below achieves that perfect “bakery quality” at home, thanks to a few chef-level secrets:
- The Tangzhong Method (shown in top-left): By cooking a small amount of flour and milk before adding it to the main dough, you ensure the donuts stay unbelievably soft and moist for days.
- The Paper Trick (shown in top-right): Instead of trying to peel sticky raw dough off your counter with your hands, you cut parchment paper squares. You fry the dough on the paper. The paper detaches naturally in the oil, and your donuts keep their perfect round shape.
- The Right Filling: A smooth, thick vanilla pastry cream that won’t ooze out when you bite into it.

Full Recipe: Sugared Vanilla Custard Donuts
Prep Time: 30 minutes (plus 2 hours rising time)
Cook Time: 4–6 minutes per batch
Yield: 10–12 medium donuts
Part 1: The Custard Filling (Make this first!)
Do this ahead of time so it can chill in the fridge while the dough rises.
Ingredients:
· 2 large egg yolks
· 50g (¼ cup) granulated sugar
· 20g (2½ tbsp) cornstarch
· 250ml (1 cup) whole milk
· 1 tsp vanilla bean paste (or 2 tsp vanilla extract)
· 50ml (¼ cup) heavy cream (for whipping later, optional)
Method:
- In a bowl, whisk egg yolks, sugar, and cornstarch until pale and thick.
- In a saucepan, heat milk until it just begins to simmer. Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs.
- Return the mixture to the saucepan over medium-low heat. Whisk constantly until it thickens into a pudding-like consistency (about 2-3 minutes). Remove from heat, stir in vanilla, and transfer to a bowl.
- Cover with plastic wrap touching the surface (to prevent a skin from forming) and chill for at least 2 hours. Tip: Once chilled, whip the heavy cream and fold it into the cold custard for a lighter, more fluffy filling.
Part 2: The Donut Dough
Ingredients:
For the Tangzhong (The paste in top-left):
· 20g (2 tbsp) bread flour
· 80ml (⅓ cup) milk
For the Main Dough:
· 300g (2½ cups) bread flour (plus extra for dusting)
· 50g (¼ cup) granulated sugar
· 7g (1 packet) instant yeast
· ½ tsp salt
· 2 large eggs, room temperature
· 50ml (¼ cup) milk, warm (100°F/38°C)
· 60g (¼ cup) unsalted butter, softened at room temperature
For Frying & Finishing:
· 1 Liter (about 4 cups) vegetable, canola, or sunflower oil
· 100g (½ cup) granulated sugar (for coating)
· Parchment paper cut into 10–12 squares (about 4×4 inches)
Part 3: Instructions
Step 1: Make the Tangzhong (Top-Left Image)
In a small saucepan, whisk the flour and milk together. Cook over medium heat, stirring constantly, until it forms a thick, paste-like pudding. Remove from heat and let it cool slightly.
Step 2: Mix the Dough
In a large mixing bowl, combine the bread flour, sugar, yeast, and salt. Add the warm eggs, warm milk, and your cooled Tangzhong paste. Knead with a dough hook or by hand for 5 minutes until it comes together. Add the softened butter one spoonful at a time while continuing to knead for another 8-10 minutes until the dough is smooth, elastic, and slightly sticky.
Step 3: First Rise
Place the dough in a lightly oiled bowl (like in the top-left photo). Cover with plastic wrap and let it rise in a warm spot for 1–1.5 hours, until doubled in size.
Step 4: Shape the Donuts
Punch the dough down gently. Turn it onto a lightly floured surface. Roll it out to about ½-inch (1.5 cm) thickness. Using a round cookie cutter or a drinking glass, cut out circles. Place each circle onto one of your pre-cut parchment paper squares. Space them out on a tray, cover lightly, and let them rise for another 45 minutes until puffy.
Step 5: The Fry (Top-Right Image)
Heat your oil in a deep, heavy pan to 350°F (175°C). Crucial step: Carefully grab the edges of a parchment square and lower the whole thing (dough and paper) into the hot oil. Fry for about 2 minutes on each side. The paper will naturally separate from the dough within the first 10 seconds; you can simply pull the paper out with tongs and discard it. The donut will float perfectly!
Step 6: Finish and Fill
Remove the fried donuts with a slotted spoon and place them on a wire rack to drain. While they are still hot, roll them generously in the granulated sugar.
Let them cool slightly. Put your chilled custard into a piping bag with a small round tip. Poke a hole into the side of each donut with a knife, and squeeze the custard inside until it bulges out slightly (as seen in the bottom image). Serve immediately!
