🧀 Crispy Cheesy Veggie Fritters
🥣 Ingredients:
2 cups cooked shredded chicken (or mashed potatoes if you want vegetarian)
1 cup shredded cheese (cheddar or mozzarella)
2 eggs
1/2 cup flour
1/4 cup chopped green onions
1/4 cup finely diced red bell pepper
2 tbsp chopped parsley or cilantro
2 cloves garlic (minced)
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
Oil for frying
👩‍🍳 Instructions:
Mix everything
In a large bowl, combine chicken (or potatoes), cheese, eggs, flour, veggies, garlic, and spices. Mix until thick and sticky.
Shape the fritters
Scoop small portions and shape into balls or small patties.
Heat oil
Heat oil in a pan over medium heat.
Fry
Fry in batches for 3–4 minutes per side until golden brown and crispy.
Drain & serve
Place on paper towels to remove excess oil.
😋 Tips:
Add chili flakes if you like it spicy
Serve with garlic sauce, ketchup, or yogurt dip
If mixture is too wet, add a bit more flour
