1.5–2 kg beef oxtails
1 large onion, sliced
4–5 garlic cloves, smashed
1 cup beef broth (or water + bouillon cube)
Pantry basics:
Salt & black pepper
Optional: paprika or thyme (for extra flavor)
🔪 Instructions
Preheat oven
Set to 180°C (350°F).
Prep the oxtails
Pat dry and season generously with salt and pepper.
(Optional but recommended) Sprinkle a little paprika or thyme.
Assemble in baking sheet
Spread oxtails in a rimmed baking sheet or roasting pan.
Scatter sliced onions and garlic over and around them.
Pour the beef broth into the pan (not over the top—keeps seasoning on meat).
Cover tightly
Use foil to seal the pan well (this is key for tender meat).
Bake low & slow
Cook for 2.5 to 3 hours until the meat is very tender and almost falling off the bone.
