Soft & Cozy Carrot Cake Cinnamon Rolls with Creamy Frosting
These soft carrot cake cinnamon rolls are fluffy, warmly spiced, and topped with a rich creamy frosting—perfect for breakfast or dessert!
Ingredients
For the Dough
3 ½ cups all-purpose flour
2 ¼ tsp instant yeast (1 packet)
¼ cup granulated sugar
½ tsp salt
¾ cup warm milk
¼ cup unsalted butter, melted
1 large egg
1 cup finely grated carrots
For the Filling
½ cup brown sugar
2 tsp ground cinnamon
½ tsp ground nutmeg
¼ cup unsalted butter, softened
For the Creamy Frosting
4 oz cream cheese, softened
2 tbsp unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract
1–2 tbsp milk (if needed for smoothness)
Instructions
- Make the Dough
In a large bowl, combine flour, yeast, sugar, and salt.
Add warm milk, melted butter, egg, and grated carrots. Mix until a soft dough forms.
Knead for 8–10 minutes until smooth and elastic.
Cover and let rise for 1 hour, or until doubled in size. - Prepare the Filling
Mix brown sugar, cinnamon, and nutmeg in a small bowl.
Roll dough into a large rectangle.
Spread softened butter over the dough, then sprinkle evenly with the cinnamon sugar mixture. - Roll and Slice
Roll the dough tightly into a log.
Cut into 12 equal rolls and place in a greased baking dish.
Cover and let rise again for 30–40 minutes. - Bake
Preheat oven to 350°F (175°C).
Bake for 22–25 minutes, until golden brown and cooked through. - Make the Frosting
Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
Add a little milk if needed for a softer texture.
Spread over warm rolls.
