🥗 Low Carb Loaded Broccoli Cauliflower Salad
Ingredients
2 cups broccoli florets (raw, chopped small)
2 cups cauliflower florets (raw, chopped small)
6–8 slices bacon, cooked crispy and crumbled
1/2 cup red onion, finely diced
1 cup shredded cheddar cheese
1/3 cup sunflower seeds (or chopped almonds)
Creamy Dressing
3/4 cup mayonnaise
2 tbsp sour cream (or Greek yogurt for lighter version)
1–2 tsp apple cider vinegar
1 tsp Dijon mustard
1–2 tsp erythritol or a pinch of sweetener (optional)
Salt & black pepper to taste
Instructions
Cook bacon until crispy, then crumble and set aside.
Chop broccoli and cauliflower into small bite-size pieces (raw, no cooking).
In a large bowl, combine broccoli, cauliflower, red onion, cheese, bacon, and sunflower seeds.
In a separate bowl, whisk together all dressing ingredients until smooth.
Pour dressing over the salad and toss well to coat everything evenly.
Chill for at least 30 minutes before serving (this makes it taste even better).
Tips
The smaller you chop the veggies, the better the texture.
Add avocado or boiled eggs if you want it more filling.
Tastes even better the next day after the flavors blend.
