3-Ingredient Comfort Dinner (Onion, Potato, Eggs Skillet)
Ingredients
3–4 medium potatoes
1 large onion
3–5 eggs
(Salt and oil are assumed pantry basics, but technically the “3 ingredients” are the main ones.)
Instructions
Prep the potatoes
Peel and cut potatoes into small cubes or thin slices.
Boil them in salted water for about 8–10 minutes until just tender.
Drain and set aside.
Cook the onion
Slice the onion thin.
In a large pan, add a bit of oil and cook the onion slowly over medium heat.
Let it turn golden and slightly sweet (this is what gives the dish its “fancy” flavor).
Combine and crisp
Add the cooked potatoes into the pan with the onions.
Fry everything together until the edges get lightly golden and crisp.
Add eggs
Make small spaces in the pan and crack the eggs in.
Cover and cook until the eggs are set (or scramble them in if you prefer).
