Mediterranean Roasted Red Pepper & Mozzarella Stuffed Chicken
Ingredients
4 boneless, skinless chicken breasts
1 cup roasted red peppers, sliced
8 oz fresh mozzarella cheese, sliced
2 cups fresh spinach (optional)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and black pepper, to taste
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Carefully cut a pocket into the side of each chicken breast without slicing all the way through.
Season both sides of the chicken with salt, pepper, paprika, and Italian seasoning.
Stuff each chicken breast with roasted red pepper slices, mozzarella slices, and spinach if using.
Secure with toothpicks if needed.
Heat olive oil in an oven-safe skillet over medium-high heat.
Add minced garlic and cook for 30 seconds.
Sear the stuffed chicken breasts for 3–4 minutes per side until golden.
Sprinkle Parmesan cheese over the top.
Transfer skillet to the oven and bake for 15–20 minutes, or until chicken is fully cooked (internal temp 165°F / 74°C).
Garnish with fresh basil or parsley and serve warm.
