Slow Cooker Lemon Chicken Recipe
Ingredients
6 bone-in, skin-on chicken thighs (or boneless if preferred)
2 lemons, sliced
3 cloves garlic, minced
1 packet onion soup mix (or 1 tablespoon onion powder + seasoning)
1/2 cup chicken broth
2 tablespoons butter, melted
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper, to taste
Fresh parsley (optional, for garnish)
Instructions
Pat the chicken dry and season with salt, pepper, paprika, and Italian seasoning.
Heat olive oil in a skillet and quickly sear the chicken for 2–3 minutes per side until lightly golden (optional, but adds flavor).
Place the chicken in the slow cooker.
Add minced garlic, onion soup mix, chicken broth, and melted butter over the chicken.
Lay lemon slices on top of the chicken.
Cover and cook:
LOW for 5–6 hours
or HIGH for 3–4 hours
Once cooked, spoon some of the lemony sauce over the chicken.
Garnish with fresh parsley and serve with rice, potatoes, or roasted vegetables.
Tip
For extra flavor, add a tablespoon of honey for a sweet lemon glaze.
