Ingredients
2 ripe bananas
2 eggs
1 cup rolled oats (blended into oat flour)
1/2 cup plain yogurt
1 teaspoon baking powder
1 teaspoon cinnamon (optional)
1 teaspoon vanilla extract
1/4 cup chopped nuts or raisins (optional)
Instructions
Preheat your oven to 180°C (350°F).
Blend the rolled oats until they become a fine flour.
In a bowl, mash the bananas well.
Add eggs, yogurt, vanilla, and cinnamon. Mix well.
Stir in the oat flour and baking powder.
Fold in nuts or raisins if using.
Pour into a greased loaf pan or small cake pan.
Bake for 30–35 minutes until golden and a toothpick comes out clean.
Let cool before slicing.
Soft, naturally sweet, and perfect for breakfast or dessert!
