Ingredients
1 cup oatmeal (quick oats or rolled oats)
2 carrots, grated or finely chopped
2 eggs
150 g plain yogurt (about 2/3 cup)
1 teaspoon baking powder
1/2 teaspoon cinnamon (optional)
Pinch of salt
Optional: handful of raisins, chopped nuts, or a little vanilla
Instructions
Preheat your oven to 180°C (350°F) and lightly grease a small baking dish or loaf pan.
In a large bowl, mix:
oats
grated carrots
baking powder
cinnamon
salt
In another bowl, whisk together:
eggs
yogurt
Pour the wet mixture into the dry ingredients and stir well.
Add raisins or nuts if using.
Let the mixture sit for 5–10 minutes so the oats soften slightly.
Transfer to the baking dish and spread evenly.
Bake for 30–35 minutes until golden and firm in the center.
Let cool for a few minutes, then slice and serve.
Serving Idea
Enjoy warm with a spoon of yogurt on top or a drizzle of honey if desired.
