Creamy “Marry Me” Chicken Soup
Ingredients
2 tbsp olive oil
2 tbsp butter
1 small onion, diced
3 cloves garlic, minced
2 cups cooked chicken, shredded (rotisserie works great)
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
2 cups baby spinach
8 oz small pasta (like ditalini or shells)
Salt and black pepper, to taste
Fresh basil or parsley for garnish
Instructions
In a large pot, heat olive oil and butter over medium heat.
Add onion and cook for 3–4 minutes until softened.
Stir in garlic, Italian seasoning, paprika, and red pepper flakes. Cook for 1 minute.
Add shredded chicken, sun-dried tomatoes, and chicken broth. Bring to a gentle boil.
Stir in pasta and cook until tender, about 8–10 minutes.
Reduce heat to low and pour in heavy cream.
Stir in Parmesan cheese until melted and smooth.
Add spinach and let wilt for 2–3 minutes.
Season with salt and black pepper to taste.
Garnish with fresh basil or parsley and serve warm.
