Heaven-on-a-Plate Family Casserole

Ingredients
4 boneless, skinless chicken breasts (or 5–6 chicken thighs)
1 packet ranch seasoning mix
1 can cream of chicken soup
1 cup sour cream
1 1/2 cups shredded cheddar cheese
6 slices cooked bacon, crumbled
3 cups cooked diced potatoes (or frozen hash browns)
2 tablespoons chopped green onions (optional)
Salt and pepper, to taste
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Season chicken with a little salt, pepper, and half the ranch seasoning.
In a bowl, mix:
cream of chicken soup
sour cream
remaining ranch seasoning
1 cup cheddar cheese
half the bacon
Spread potatoes in the baking dish.
Place chicken on top of potatoes.
Pour creamy mixture evenly over everything.
Top with remaining cheese and bacon.
Cover with foil and bake for 35 minutes.
Remove foil and bake another 15–20 minutes, until bubbly and chicken is fully cooked.
Sprinkle with green onions before serving.
