Ingredients
2 cups uncooked rice (white rice works best)
1 can cream of chicken soup (or mushroom if that’s what you have)
2 ½ cups water or broth
1–2 cups frozen mixed vegetables (peas, carrots, corn)
2–3 chicken thighs or 1–2 chicken breasts (whatever is cheapest)
1 tsp garlic powder (optional)
Salt & pepper to taste
Optional: a little oil or butter for extra flavor
Instructions
Preheat oven to 180°C (350°F).
In a baking dish, pour in uncooked rice.
Add cream of chicken soup + water/broth and mix well.
Stir in frozen vegetables.
Place the raw chicken on top.
Season everything with salt, pepper, and garlic powder.
Cover tightly with foil.
Bake for 60–75 minutes, until rice is soft and chicken is fully cooked.
Let it sit 5–10 minutes before serving so it thickens up.
