🥣 Creamy “Marry Me” Chicken Soup
🛒 Ingredients:
2 tbsp olive oil or butter
1 small onion, finely chopped
3 cloves garlic, minced
2 cups cooked chicken (shredded or diced)
4 cups chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes (chopped)
1 tsp Italian seasoning
½ tsp paprika
Salt & black pepper to taste
1–2 cups baby spinach (optional)
½ cup small pasta (like ditalini) or 1 diced potato
Fresh basil or parsley (for garnish)
👩🍳 Instructions:
Sauté aromatics
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft (about 3–4 minutes). Stir in garlic and cook for 1 minute.
Build the base
Add chicken broth, Italian seasoning, paprika, and sun-dried tomatoes. Bring to a gentle boil.
Add starch
Stir in pasta (or potatoes). Let simmer until tender (8–12 minutes).
Add chicken & creaminess
Add cooked chicken, then pour in heavy cream. Stir well and reduce heat to low.
Cheesy finish
Mix in Parmesan cheese until melted and smooth.
Final touch
Add spinach (if using) and cook until wilted. Taste and adjust salt and pepper.
Serve
Ladle into bowls and garnish with fresh herbs and extra Parmesan.
💡 Tips:
For extra flavor, use rotisserie chicken.
Want it spicy? Add a pinch of red pepper flakes.
Make it thicker by simmering longer or adding a cornstarch slurry.
