🥔 Creamy Pour-Over Potato Casserole

1 kg potatoes (peeled and thinly sliced)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 cup heavy cream (or cooking cream)
½ cup milk
1 cup shredded cheese (cheddar or mozzarella)
2 tbsp butter
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
½ tsp dried thyme or oregano (optional)

Preheat oven
Set your oven to 180°C (350°F).
Prepare potatoes
Slice potatoes thinly (this helps them cook evenly and soak up the sauce).
Make the creamy pour-over
In a pan, melt butter over medium heat.
Add onion and cook until soft (about 3–4 minutes).
Stir in garlic for 1 minute.
Pour in cream and milk, then add salt, pepper, and spices.
Let it gently simmer for 2–3 minutes.
Assemble the casserole
Grease a glass baking dish.
Layer the sliced potatoes evenly.
Pour the creamy mixture over the potatoes (this is the “pour-over”).
Sprinkle cheese on top.
Bake
Cover with foil and bake for 40 minutes.
Remove foil and bake another 20–25 minutes until golden and bubbly.
Rest & serve
Let it sit for 5–10 minutes before serving—it thickens nicely.
