1 cup fresh or frozen blueberries
2 eggs
1 cup milk (any kind)
1/3 cup sugar (adjust to taste)
1 tsp vanilla extract
1/2 cup flour (or oats for a more rustic version)
1 tsp baking powder
Pinch of salt
Optional: lemon zest or cinnamon for extra flavor
Instructions
Preheat oven to 180°C (350°F). Grease small ramekins or a baking dish.
Mix wet ingredients: In a bowl, whisk eggs, milk, sugar, and vanilla until smooth.
Add dry ingredients: Stir in flour (or oats), baking powder, and salt.
Add blueberries: Fold most of the blueberries into the batter.
Fill ramekins and top with remaining berries.
Bake for 25–30 minutes, until puffed and golden on top.
Let cool slightly—it will set into a soft custard texture.
Tips
For extra richness, replace part of the milk with cream.
Sprinkle a little sugar on top before baking for a lightly caramelized crust.
