Depression-Era Sunday Supper Casserole
A simple old-fashioned comfort dish made with pantry staples, creamy potatoes, onions, and ground beef baked together until golden and bubbling.
Ingredients
500 g (1 lb) ground beef
4 medium potatoes, thinly sliced
1 onion, thinly sliced
1 can cream of mushroom soup
½ cup milk
Salt and black pepper, to taste
1 tsp garlic powder (optional)
1 cup shredded cheddar cheese (optional but delicious)
Instructions
Preheat oven to 180°C (350°F).
Grease a casserole dish.
Brown the ground beef in a skillet with a little salt and pepper. Drain excess grease.
Layer half the potatoes in the casserole dish.
Add half the onions and half the beef.
Repeat layers with remaining potatoes, onions, and beef.
In a bowl, mix the cream soup with milk and garlic powder.
Pour evenly over the casserole.
Cover with foil and bake for 1 hour.
Remove foil, sprinkle cheese on top if using, and bake another 15 minutes until golden and bubbly.
Optional Depression-Era Tips
Add sliced carrots for extra stretch.
Use leftover roast meat instead of beef.
A little paprika on top gives great flavor and color.
