Prime Rib Roast Recipe 🥩
Ingredients
1 prime rib roast (4–6 lb / 2–3 kg)
2 tbsp olive oil or softened butter
4 garlic cloves, minced
2 tsp kosher salt
1 tsp black pepper
1 tsp fresh rosemary, chopped
1 tsp fresh thyme
1 tsp onion powder
Optional: horseradish sauce for serving
Instructions
Bring to room temperature
Remove the roast from the fridge 1–2 hours before cooking.
Season
Mix olive oil, garlic, salt, pepper, rosemary, thyme, and onion powder. Rub all over the meat.
Roast
Preheat oven to 450°F (230°C).
Roast for 20 minutes to create a crust.
Reduce heat to 325°F (165°C) and continue cooking:
Rare: 120–125°F internal temp
Medium-rare: 130–135°F
Medium: 140°F
Approximate time: 12–15 minutes per pound after lowering heat.
Rest
Tent loosely with foil and rest 20–30 minutes before slicing.
Serve
Slice thick and serve with mashed potatoes, roasted vegetables, or au jus.
Simple Au Jus
1 cup beef broth
Pan drippings
1 tsp Worcestershire sauce
Simmer together for 5 minutes and serve warm
