Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 large tortillas or wraps
- 2 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/2 cup grated Parmesan cheese
- 1/4 cup croutons (optional)
- Fresh lemon wedges for serving
Instructions:
- Cook the Chicken:
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).
- Remove from heat and let it rest for a few minutes before slicing.
- Prepare the Wraps:
- In a large bowl, combine the chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese. Toss until the lettuce is well coated.
- Assemble the Wraps:
- Lay a tortilla flat on a clean surface.
- Place a portion of the lettuce mixture in the center of the tortilla.
- Add sliced chicken on top of the lettuce. If desired, sprinkle with croutons for added crunch.
- Fold in the sides of the tortilla and then roll it up from the bottom to enclose the filling.
- Serve:
- Cut the wraps in half diagonally and serve with fresh lemon wedges on the side.
