Garlic Roasted Eggplant Rounds
Ingredients
1 large Eggplant
3 tablespoons olive oil
3–4 garlic cloves, minced
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt, to taste
Black pepper, to taste
2 tablespoons grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat the oven
Set your oven to 220°C (425°F). Line a baking tray with parchment paper.
Prepare the eggplant
Slice the eggplant into rounds about 1–1.5 cm thick.
Season
In a small bowl, mix olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
Coat the slices
Arrange eggplant rounds on the tray and brush both sides with the garlic mixture.
Roast
Bake for 20–25 minutes, flipping halfway through, until golden and tender.
Optional cheesy finish
Sprinkle Parmesan over the top during the last 5 minutes of baking.
Serve
Garnish with fresh parsley and serve hot.
