Crispy Pork Belly Bites
Ingredients
1.5–2 lb (700–900 g) pork belly, skin on
1 tbsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika (optional)
1 tbsp oil
Optional glaze (for glossy, sticky edges)
2 tbsp honey
1 tbsp soy sauce
1 tbsp brown sugar
1 tsp minced garlic
Instructions
Prep the pork
Pat pork belly very dry.
Cut into 1½-inch (4 cm) cubes.
Rub with salt, pepper, garlic powder, onion powder, paprika, and oil.
First roast
Heat oven to 160°C (320°F).
Arrange cubes in a single layer in a baking dish or on a rack.
Roast 60–75 minutes until tender and fat starts rendering.
Crisp it up
Increase oven to 230°C (445°F).
Roast another 20–25 minutes, turning once, until deeply golden and crispy.
Optional glaze
Mix glaze ingredients.
Toss pork with glaze and roast 5 more minutes until sticky and caramelized.
Rest & serve
Let rest 5 minutes.
Serve with rice, pickled onions, salad, or a spicy dipping sauce.
