Ingredients
3 large eggs
150 g egg whites
120 g cooked chicken breast, diced (or turkey)
½ cup low-fat cottage cheese
1 handful spinach
½ small avocado (optional)
Salt & black pepper
½ tsp garlic powder
½ tsp paprika
1 tsp olive oil or cooking spray
Instructions
Heat a skillet over medium heat and add oil.
Add diced chicken and warm for 2–3 minutes.
Add spinach and cook until wilted.
Pour in eggs + egg whites and scramble gently.
Season with salt, pepper, garlic powder, and paprika.
Transfer to a bowl and top with cottage cheese and avocado.
