Ingredients
For the Caramel Fudge:
· 1 cup (2 sticks) unsalted butter
· 2 cups packed light brown sugar
· 1 cup granulated white sugar
· 1 cup heavy cream (whipping cream)
· 1/2 cup light corn syrup (prevents crystallization and keeps it chewy)
· 1/4 teaspoon salt
· 1 teaspoon vanilla extract
For the Nuts:
· 2 cups mixed whole nuts (Use a mix of pecans, whole almonds, macadamia nuts, and peanuts, just like in the photo).

Instructions
Step 1: Prepare the Pan
Line your 8×8-inch baking pan with parchment paper or foil, leaving an overhang on two opposite sides (this makes it easy to pull the fudge out later). Lightly butter the paper.
Step 2: Cook the Caramel Base
In a large, heavy-bottomed saucepan over medium heat, combine the butter, brown sugar, granulated sugar, heavy cream, corn syrup, and salt. Stir constantly with a wooden spoon until the butter is melted and the sugars have dissolved.
Step 3: Boil to the Right Temperature
Once the mixture is smooth and boiling, stop stirring and attach your candy thermometer to the side of the pan (ensure the tip is submerged in the liquid, not touching the bottom).
Bring the mixture to a boil over medium heat without stirring. Continue boiling until the thermometer reads 240°F (115°C)—this is the “Soft Ball Stage”. This usually takes about 10-15 minutes. Tip: If it starts to boil too high, lower the heat slightly to prevent bubbling over.
Step 4: Add Vanilla and Nuts
Once the mixture reaches 240°F, immediately remove the pan from the heat. Carefully stir in the vanilla extract (it will bubble up slightly). Quickly fold in your mixed whole nuts, ensuring they are fully coated in the hot caramel.
Step 5: Pour and Set
Pour the hot caramel nut mixture into your prepared baking pan. Use a spatula to smooth the top evenly, pushing the nuts down into the caramel so they are mostly submerged (as seen in the photo).
If desired, sprinkle a pinch of flaky sea salt over the top while it’s still warm to enhance the sweet/salty flavor.
Step 6: Chill and Cut
Let the fudge cool on the counter for 30 minutes, then transfer the pan to the refrigerator for at least 2–3 hours, or until it is completely firm and set.
Once firm, use the parchment paper overhang to lift the block out of the pan. Place it on a cutting board and use a large, sharp knife to cut it into 1-inch squares.
