The magic of a cream puff lies in choux pastry. Unlike bread dough that relies on yeast, choux uses steam. When the dough hits a hot oven, the water inside creates steam, which inflates the dough into a hollow, airy shell. For the Choux Pastry (The Shells):
· ½ cup (113g) unsalted butter, cut into pieces
· 1 cup (240ml) water
· ¼ teaspoon salt
· 1 cup (125g) all-purpose flour
· 4 large eggs (room temperature)
For the Vanilla Pastry Cream (The Filling):
· 2 cups (480ml) whole milk
· ½ cup (100g) granulated sugar
· ¼ cup (32g) cornstarch
· ¼ teaspoon salt
· 4 large egg yolks
· 2 teaspoons vanilla extract
· 2 tablespoons unsalted butter, softened
For the Topping:
· 1 cup (240ml) heavy whipping cream
· 2 tablespoons powdered sugar (plus extra for dusting)
· ½ teaspoon vanilla extract
Step-by-Step Instructions
Part 1: Make the Pastry Cream (Make this first! It needs to chill)
- In a medium saucepan, heat the milk over medium heat until it is just simmering (don’t let it boil over). Remove from heat.
- In a medium bowl, whisk together the sugar, cornstarch, and salt. Add the egg yolks and whisk until the mixture is smooth and pale.
- Temper the eggs: While whisking constantly, slowly pour about ½ cup of the hot milk into the egg mixture. This slowly raises the egg temperature so they don’t scramble.
- Pour the egg mixture back into the saucepan with the remaining hot milk. Place over medium heat and cook, whisking constantly, until the mixture thickens and comes to a boil (about 2 minutes).
- Once boiling, cook for 1 more minute, whisking vigorously, then remove from heat.
- Stir in the vanilla and butter until melted and smooth. Pour into a bowl, press plastic wrap directly onto the surface (to prevent a skin from forming), and refrigerate for at least 1 hour until completely cold.
Part 2: Make the Choux Pastry
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a medium saucepan, combine the butter, water, and salt. Cook over medium heat until the butter melts and the mixture comes to a rolling boil.
- Remove from heat and pour in the flour all at once. Stir vigorously with a wooden spoon until the dough comes together into a smooth ball and pulls away from the sides of the pan.
- Return the pan to low heat and cook for 1–2 minutes, stirring constantly, to dry out the dough.
- Transfer the dough to a large bowl. Let it cool for about 5 minutes.
- Add the eggs: Beat in the eggs one at a time, mixing thoroughly after each addition. Ensure each egg is fully incorporated before adding the next. The final dough should be smooth, glossy, and stiff enough to hold a peak when pulled with your spoon.
Part 3: Assemble and Bake
- Transfer the choux dough into a piping bag fitted with a large, plain round tip (or use a zip-top bag with a corner snipped off).
- Pipe the dough onto your baking sheet into circles about 2 inches wide and 1 inch high. Leave about 2 inches of space between each puff.
- Bake at 400°F (200°C) for 15 minutes. Do not open the oven door!
- After 15 minutes, lower the temperature to 350°F (175°C) and bake for another 10–15 minutes until the puffs are puffed, golden brown, and dry to the touch.
- Remove from the oven and place on a wire rack to cool completely. (If you want them extra crisp, poke a small hole in the bottom of each puff with a toothpick and bake for 5 more minutes at 350°F, but this isn’t strictly necessary).
Part 4: Fill and Finish
- Once your shells are completely cool and your pastry cream is cold, remove the pastry cream from the fridge and give it a vigorous stir to smooth it out.
- Pipe the vanilla cream into the puffs. You can do this by slicing the puffs in half horizontally and filling them, or by sticking a small piping tip into the bottom of each puff and piping the cream inside.
- Prepare the whipped topping: In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla with an electric mixer until stiff peaks form.
- Pipe a decorative swirl of whipped cream on top of each filled puff (as shown in your photo).
- Sift a heavy dusting of powdered sugar over the top of the cream swirls.
Store and serve: Cream puffs are best served fresh the same day, but you can store them in an airtight container in the refrigerator for up to 1 day.
