Ingredients
· 2 tbsp olive oil
· 1 onion, chopped
· 2 carrots, diced
· 2 celery stalks, diced
· 3 garlic cloves, minced
· 1 zucchini, diced
· 1 can (14 oz) diced tomatoes
· 6 cups vegetable or chicken broth
· 1 tsp dried thyme
· 1 bay leaf
· 1 cup green beans (fresh or frozen), cut into 1-inch pieces
· 1 cup corn kernels (fresh or frozen)
· Salt and pepper to taste
· Fresh parsley for garnish
Instructions
- Sauté aromatics – In a large pot, heat oil over medium heat. Add onion, carrots, and celery. Cook until soft (about 5–7 min). Add garlic and cook 1 min more.
- Build the base – Stir in zucchini, diced tomatoes (with juices), broth, thyme, and bay leaf. Bring to a boil.
- Simmer – Reduce heat, cover, and simmer for 15 minutes.
- Add remaining veggies – Stir in green beans and corn. Cook another 10–15 min until tender.
- Season – Remove bay leaf, add salt and pepper to taste.
- Serve – Ladle into bowls, garnish with parsley, and enjoy with crusty bread.
