Festive Antipasto Cream Cheese Log with Roasted Red Peppers and Parmesan
Ingredients:
1 package (8 oz) cream cheese, softened
1/2 cup roasted red peppers, chopped
1/4 cup green olives, chopped
1/4 cup black olives, chopped
1/2 cup marinated artichoke hearts, chopped
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Fresh rosemary sprigs, for garnish
Fresh cranberries, for garnish
Crackers and baguette slices, for serving
Directions:
In a medium-sized bowl, combine the cream cheese, chopped roasted red peppers, green and black olives, artichoke hearts, and Parmesan cheese. Stir well until all ingredients are evenly mixed.
On a sheet of parchment paper, shape the mixture into a log, rolling it into a cylinder shape.
Spread the fresh parsley evenly over the surface of the log, pressing gently to ensure it sticks to the cream cheese mixture.
Transfer the log onto a wooden serving board and garnish with fresh rosemary sprigs and scattered cranberries for a festive touch.
Surround the log with crackers and baguette slices, ready for serving.
