You’ll need:
3–4 cups fresh blueberries
½ cup sugar (adjust to taste)
1 tbsp lemon juice (optional, but great)
1 tsp vanilla
1 cup pancake mix or biscuit mix
⅓ cup milk
2 tbsp melted butter
Pinch of cinnamon or nutmeg (optional)
How to make it:
Toss blueberries, sugar, lemon juice, and vanilla right in the slow cooker.
In a bowl, mix pancake/biscuit mix + milk + melted butter.
Spoon batter over the blueberries (don’t stir).
Cover and cook HIGH 2–3 hours or LOW 4–5 hours, until bubbly and set.
Let it sit 10–15 min to thicken.

4 cups fresh blueberries

1 tbsp lemon juice

1 tbsp cornstarch + 1 tbsp water (optional, for thicker sauce)
How to make it:
Toss everything (except cornstarch slurry) into the slow cooker.
Cook LOW 3–4 hours until juicy and broken down.
Stir in cornstarch slurry at the end if you want it thicker.
Cool a bit—it thickens more as it cools.
