Simple Recipe: Youâll need:
1 tbsp oil or butter
1 small onion (chopped)
2 carrots (sliced)
2 celery stalks (chopped)
2 cloves garlic (minced)
6 cups chicken broth
1 cup cooked chicken (shredded)
1 cup egg noodles
Salt & pepper
Optional: ginger, lemon, parsley
How:
SautĂ© onion, carrots, celery in oil (5â7 min).
Add garlic (30 sec).
Pour in broth + chicken. Simmer 10 min.
Add noodles, cook until soft.
Salt/pepper to taste. Add lemon if youâre stuffy.
đ Chicken & Rice Soup (aka âget well soonâ in a bowl)
Youâll need:
Same veggies as above
6 cups chicken broth
1 cup cooked chicken
œ cup uncooked rice
How:
Sauté veggies.
Add broth + rice, simmer 15â18 min.
Add chicken at the end, warm through.
Salt, pepper, optional lemon.
đ„ Chicken Pot Pie (neighborly classic)
Quick version:
Frozen pie crust
Cooked chicken
Frozen mixed veggies
Cream of chicken soup
Salt & pepper
How:
Mix chicken + veggies + soup + seasoning.
Put into pie crust, top with another crust.
Bake at 190°C / 375°F for ~35â40 min until golden.
đ Baked Ziti / Pasta Casserole
Youâll need:
Cooked ziti or penne
Jarred marinara sauce
Ricotta or cream
Mozzarella cheese
How:
Mix pasta + sauce + ricotta.
Top with mozzarella.
Bake 190°C / 375°F for 20â25 min.
