🛒 Ingredients
1.5–2 kg beef chuck roast
1 tsp salt
1 tsp black pepper
1 tsp paprika
2 tbsp olive oil
4 cloves garlic, minced
½ cup honey
¼ cup soy sauce
1 tbsp Dijon mustard (optional but recommended)
1 cup beef broth
500 g baby potatoes
3–4 carrots, cut into chunks

1️⃣ Season & Sear
Pat roast dry.
Season with salt, pepper, and paprika.
Heat olive oil in a large Dutch oven or pot over medium-high heat.
Sear roast on all sides until deeply browned (about 3–4 minutes per side).
Remove and set aside.
2️⃣ Make the Glaze
In the same pot, sauté garlic for 30 seconds.
Add honey, soy sauce, Dijon mustard, and beef broth.
Stir and let simmer 2–3 minutes.
3️⃣ Slow Cook
Return roast to the pot.
Add potatoes and carrots around it.
Cover and cook:
Oven: 160°C (325°F) for 3–3½ hours
OR
Stovetop: Very low simmer for about 3 hours
OR
Slow cooker: 7–8 hours on LOW
4️⃣ Finish the Glaze
Remove roast and vegetables.
Simmer sauce uncovered 5–10 minutes until thick and glossy.
Slice roast and spoon glaze generously over the top.
🔥 Tips
For extra caramelization, broil the glazed roast 3–4 minutes before serving.
Let the meat rest 10–15 minutes before slicing for juicy results.
